Many are aware of the benefits of certain fats (such as the omega-3 fatty acids). Less known is the importance of what scientists call the short chain fatty acids (SCFAs). Unlike most fats which are very long chains of hydrocarbons, SCFAs are much smaller, often only having three or four hydrocarbons.
